Decadent Choca Mocha Baked Cheesecake – Gluten-Free, Can You Believe?

Bake time: 75-80 mins

Ingredients:

1 pack of Sowans Chocolate Brownie Mix

50ml of strong warm coffee

350g light soft cheese

50g caster sugar

1 tsp coffee extract

2 large eggs

110ml whipped double cream.

gluten-free dark chocolate or small gluten-free easter eggs for decoration (optional)

Method:

1. Preheat the oven to 160°C. Brush the baking tin with a small amount of sunflower oil.

2. Prepare the Sowan’s brownie mix according to the pack instructions. Pour the batter into the prepared tin and bake for 40-45 minutes. For a round cheesecake, use a 26cm springform tin (yields 14-16 servings). For bite-sized squares, use a 30cm x 20cm rectangular tin (yields 16 squares).

3. When baked, remove from the oven and allow to cool completely.

4. Meanwhile, place the cream cheese in a large bowl and whisk until soft. Add the sugar and coffee extract, then beat until well combined.

5. Whisk the eggs into the cream cheese mixture. Gently fold in 80ml of whipped double cream using a metal spoon.

6. Spoon the mixture over the cooled brownie base, smoothing the top. Bake in the preheated oven for 30-35 minutes—it should remain slightly wobbly in the center. Turn off the oven and leave the cheesecake inside to cool gradually (this prevents sinking in the middle). Once cooled, refrigerate until completely cold.

7. Once fully chilled, remove the cheesecake from the tin.

8. Spread the remaining 30ml of whipped double cream evenly over the top.

9. Decorate with grated gluten-free dark chocolate or small gluten-free Easter eggs.
