Soft, moist and naturally delicious, this gluten-free banana bread is the perfect way to enjoy a comforting homemade bake. Using Sowan’s gluten-free banana bread mix, this recipe creates a beautifully tender loaf with a sweet banana flavour and a lovely texture. It’s ideal for breakfast, an afternoon treat, or served warm with a cup of tea.
Ingredients
- 1 pack of Sowan’s gluten-free banana bread mix
- 2 ripe bananas, mashed
- 3 eggs
- 185ml vegetable oil
- 5ml lemon juice
- 5ml vanilla extract
Method
- Preheat the oven to 180°C (160°C fan).
- Grease and line a loaf tin with baking paper.
- In a large bowl, mash the ripe bananas until smooth. Add the eggs, oil, lemon juice and vanilla extract, then mix well.
- Pour in the banana bread mix and stir until everything is combined. Be careful not to overmix — a few small lumps are fine.
- Transfer the mixture into the prepared loaf tin and smooth the top.
- Bake for around 45–60 minutes, or until a skewer inserted into the centre comes out clean.
- Leave to cool in the tin for 10 minutes before transferring it to a wire rack. Slice and enjoy warm or at room temperature.
Tip: Store in an airtight container for up to 3 days, or freeze slices for an easy grab-and-go treat.
