Gluten Free Banana Bread

Soft, moist and naturally delicious, this gluten-free banana bread is the perfect way to enjoy a comforting homemade bake. Using Sowan’s gluten-free banana bread mix, this recipe creates a beautifully tender loaf with a sweet banana flavour and a lovely texture. It’s ideal for breakfast, an afternoon treat, or served warm with a cup of tea. 

Ingredients
  • 1 pack of Sowan’s gluten-free banana bread mix
  • 2 ripe bananas, mashed
  • 3 eggs
  • 185ml vegetable oil
  • 5ml lemon juice
  • 5ml vanilla extract
Method
  1. Preheat the oven to 180°C (160°C fan).
  2. Grease and line a loaf tin with baking paper.
  3. In a large bowl, mash the ripe bananas until smooth. Add the eggs, oil, lemon juice and vanilla extract, then mix well.
  4. Pour in the banana bread mix and stir until everything is combined. Be careful not to overmix — a few small lumps are fine.
  5. Transfer the mixture into the prepared loaf tin and smooth the top.
  6. Bake for around 45–60 minutes, or until a skewer inserted into the centre comes out clean.
  7. Leave to cool in the tin for 10 minutes before transferring it to a wire rack. Slice and enjoy warm or at room temperature.

Tip: Store in an airtight container for up to 3 days, or freeze slices for an easy grab-and-go treat.
